Ingredients:

  • 4 Homestead Chuck Eye Steaks (about 6 oz each)

  • 3 Tbsp olive oil, divided

  • 2 tsp coarse sea salt

  • 1 tsp black pepper

Garlic Herb Butter:

  • 3 Tbsp unsalted butter, softened

  • 2 cloves garlic, minced

  • 1 tsp fresh thyme, finely chopped

  • 1 tsp fresh rosemary, finely chopped

  • Salt and pepper to taste

Instructions:

  1. Pat steaks dry and season both sides with salt and pepper. Place on a rack and refrigerate, uncovered, for at least 30 minutes and up to 4 hours.

  2. Mix the softened butter with garlic, thyme, rosemary, salt, and pepper. Set aside.

  3. Before cooking, rub steaks with 2 Tbsp olive oil and let them rest at room temperature for 15 minutes.

  4. Heat a cast iron skillet over medium-high heat. Add the remaining olive oil.

  5. Sear the steaks for 4–5 minutes per side, or until the internal temperature reaches 130°F for medium-rare.

  • ½ Fresno chili, minced

  • Salt and pepper to taste

Instructions:

  1. Season steaks generously with salt and pepper. Place on a plate and refrigerate uncovered for 1–2 hours.

  2. In a small bowl, combine butter, parsley, cilantro, chives, and Fresno chili. Add salt and pepper to taste, then refrigerate until ready to use.

  3. Preheat the grill to high and lightly oil the grates with coconut oil.

  4. Grill the steaks for about 5 minutes per side for medium-rare or until desired doneness.

  5. Top each steak with a slice of chili herb butter and let rest for 5 minutes before serving.
